Ingredients & Swaps

ingredients for Ninja CREAMi lemon ice cream include whole milk, heavy cream, sugar, lemons, vanilla extract and protein powder
  • Whole milk – any animal or plant based milk should work, but amounts may need to be adjusted
  • Heavy cream – coconut milk may be substituted, but it will affect the flavor
  • Protein powder (optional) – protein or collagen powder, plain or vanilla flavored tastes great
  • Sugar – other sweeteners, like monk fruit, erythritol, honey, and stevia could be used, but the amounts will need to be adjusted
  • Vanilla extract – could also use vanilla powder
  • Whole lemons – fresh lemons is what makes this recipe special, so don’t skimp here. But you could use bottled lemon juice if necessary.

How to Make Lemon Ice Cream in the Ninja CREAMi

Step 1 If using protein or collagen powder, mix it together with the milk and cream until there are no more lumps.

Step 2 Add the sugar and stir until it’s all dissolved. Then add the vanilla, lemon juice and zest and stir.

Step 3 Pour into a Ninja CREAMi container, put the lid on and freeze for at least 24 hours.

Step 4 Blend on the ICE CREAM setting. RESPIN if necessary.

Ingredients

  • 1 1/2 cups whole milk
  • 3/4 cup heavy cream
  • 40 g protein powder, plain or vanilla (OPTIONAL)
  • 1/2 cup sugar
  • 1 1/2 tsp vanilla extract
  • 2 lemons, zested and juiced

Instructions

  1. In a large bowl, mix together the milk, cream, and protein powder, if using. Stir until there are no clumps of powder. Add the sugar and mix until dissolved.
  2. Add the vanilla extract, lemon juice, and zest. Mix together and pour into a Deluxe Ninja CREAMi container and freeze for 24 hours.
  3. If you like, leave the container sit for about 10 minutes on the counter before processing. Blend up on the ICE CREAM setting. RESPIN if crumbly.
  4. Add mix-ins and toppings if you like, and serve.

Tips & Variations

Substitute plant based milk for the whole milk, and swap the heavy cream for coconut cream. The consistency will change and you may have to adjust the amounts.

Swap monk fruit, erythritol, or another low carb sweetener for the sugar.

Try fresh blueberries or strawberries as toppings. Or mix in shortbread cookies for a lemon meringue pie or cheesecake flavor.
