Handy tip: Use a Silicone Pad!
I like to use a silicone mat for this recipe for two reasons. It may prevent the underside of the potato from getting overcooked, and it prevents the potato from sticking to the bottom of the pot. Sometimes the sweet potatoes will split while they’re cooking and the juice can become quite sticky on the cooking pot. With a silicone mat, the sticky stuff is easy to clean up.

Here are the main ingredients I used in my recipe for Ninja Speedi Southwest Stuffed Sweet Potatoes, along with suggestions for substitutions. See the Tips section below for suggestions on making it vegetarian, dairy-free, and lower carb. For the full ingredient list, see the recipe card.
Sweet potatoes There are several varieties of sweet potatoes. I think any of them would work in this recipe. I prefer the bright orange garnet variety, so that’s what you see here, but you’re welcome to use your favorite.
Taco seasoning You could skip the taco seasoning altogether, but if you use it, either commercial or homemade taco seasoning is fine. I like my own recipe of chili powder, cumin, paprika and a few herbs. Or mix things up with a Greek or Cajun seasoning blend!
Jalapeno From the picture below, you can see that I placed the jalapeño on the Ninja Speedi crisping tray along with the bacon. I did this just for the picture. If you want to roast it, I wouldn’t add it to the machine until the unit switches to the air fryer or baking mode. If you put it in at the beginning with the bacon, it turns mushy from the steam. Or you could not cook it at all and just dice it up. This is actually what I prefer.
Sweet red pepper You can use fresh, diced red pepper or jarred, roasted red pepper, which is what I like and used in this recipe. Or you could roast your own red pepper by placing the red pepper halves on the crisping try after the unit switches to air fry or bake mode.
Cilantro Fresh cilantro is preferred over dried, because of the crisp, almost citrus-y flavor it adds to the dish. But if fresh isn’t available, then you could use about 1 teaspoon dried cilantro.
Avocado This is an optional ingredient. I add it when I want to make the dish a meal, instead of a side dish. Avocado adds a lot more fat and calories, but also lots of fiber, so you decide whether to add it or not.

Tips for Making Southwest Stuffed Sweet Potatoes in the Ninja Speedi
Make it vegetarian Simply substitute black beans, or another bean variety, for the bacon.
Make it dairy-free Just use vegan or dairy-free sour cream in the recipe.
Make it low carb/keto Sweet potatoes don’t really fit into a keto diet, but they can be considered low carb. You could use smaller potatoes in the recipe, and skip the red pepper altogether, but the carb count would probably still be around 25 grams, depending on the size of the potato.

Ninja Speedi Southwest Stuffed Sweet Potatoes
These Ninja Speedi Southwest Stuffed Sweet Potatoes are loaded with seasoned bacon, jalapeno, red pepper, green onion, and avocado and topped with sour cream and fresh cilantro. They're perfect for a light meal or a hearty side dish, all steamed perfectly in the Ninja Speedi!
Ingredients
- 1 cup water
- 4 medium sweet potatoes, washed
- 4 bacon slices
- 1/2 Tbsp taco seasoning
- 1 jalapeno, halved and seeded
- 1/2 cup red pepper, diced
- 2 green onions, sliced
- 1 avocado, cubed
- 2 Tbsp fresh cilantro, chopped
- 1/2 cup sour cream
Instructions
- Add the water, the silicone mat if using, and the sweet potatoes to the Ninja Speedi cooking pot.
- Sprinkle both sides of the bacon with the taco seasoning. Place the bacon on the crisping tray. Tip: I like to cut the bacon strips in half so they fit nicely on the tray. Place the crisping tray in the elevated position in the cooking pot.
- Close the lid. Make sure the SmartSwitch is set to RAPID COOK, the press the POWER button. Select STEAM & BAKE. Set the tempwerature to 400° and the time to 30 minutes. Press the START/STOP button.
- The unit will steam for about 15 minutes. While it's steaming, you can prep the veggies for the toppings.
- Once the unit has switched over to baking mode and there is 25 minutes left on the timer, lift the lid and check the bacon. If it is done, use silicone-tipped tongs to remove it to a plate. Optional: add the halved jalapeno and/or red pepper to the crisping tray to roast. Close the lid and the time will resume.
- When the unit shuts off, lift the lid and remove the crisping tray with silicone-tipped tongs. Then remove the sweet potatoes to serving plates.
- Split open the tops of the sweet potatoes. Crumble the bacon and sprinkle over the potatoes. Add the remaining toppings and serve.
