Stock This recipe uses chicken stock because it complements carrots and dill perfectly. I don’t recommend using a vegetable broth, but you could use a vegan chicken broth if you like.

Can I make it vegan? Yes, you can! Simply substitute a plant-based oil or butter for the cow butter in the recipe. Also substitute a vegan chicken-flavored stock for the regular chicken stock.

What if I don’t have a soup maker? No problem. You can still maker “soup maker” carrot soup on the stove in a medium saucepan. Just add all the ingredients to the pot and cook over medium heat and cook for about 30 minutes. Blend the soup with a stick blender for about 3 minutes before serving.

Ingredients

  • 3 Tbsp butter
  • 1/2 cup onion, chopped
  • 2 cloves garlic, chopped
  • 1 lb. carrots, cut into 1/2" slices
  • 3 cups chicken stock
  • 1 tsp. fresh or dried dill
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • OPTIONAL:
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder

Instructions

1. If your soup maker has a SAUTE function, use it to saute the butter, garlic, and onion. If not, skip to step 2.

2. Add all/remaining ingredients to the soup maker. Stir before installing the lid.

4. Select the SMOOTH SOUP function, then START.

5. Once the soup is ready, serve immediately.
