Gather these, along with all the ingredients listed in the recipe below, so you can whip up a batch of curried parsnip soup in the soup maker in about 30 minutes.

Butter I included butter in the recipe because I like butter and my soup maker has a saute function which requires an oil to toss the onion and garlic around in. Feel free to substitute another fat, like your favorite oil, or leave it out altogether.

Parsnips Parsnips are seasonal vegetables (fall to spring) and aren’t commonly used in the U.S. For those reasons, they can be hard to find when they are out of season. Try organic grocery stores or co-ops. For the best parsnips, hit your local farmer’s market in the fall.

Spices Of course a curry dish is going to have lots of spices in various combinations. I used curry powder, coriander, cumin, ginger, and cinnamon. Feel free to adjust the amounts to your liking or leave some out if you prefer. You can even substitute garam masala if you have it on hand.

Coconut Cream I prefer the taste of coconut cream in this dish, but you could substitute another milk product if you like. Some suggestions are heavy cream, half-and-half, or a plant-based milk.

How to Make Curried Parsnip Soup in a Soup Maker

Step 1 Add the aromatics (onion, garlic, and butter) to the carafe and heat on the SAUTE setting.

Step 2 Add the remaining ingredients to the carafe and select the SMOOTH SOUP setting.

Step 3 When the soup is done, carefully remove the lid. The carafe will be very hot and release steam. Serve the soup immediately. See the Tips section below for serving suggestions.

Can I make it vegan or dairy-free? Yes, you can! Simply leave out the butter or use a plant-based butter in its place.

What if I don’t have a soup maker? No problem. Using a medium saucepan, saute the onion and garlic in the butter or oil over medium heat, then add the remaining ingredients. Continue to cook on medium for about 25 minutes, stirring frequently. Then blend the soup with a stick blender for about 3 minutes.

Ingredients

  • 2 Tbsp butter
  • 1/2 cup onion, chopped
  • 3 cups parsnips, peeled and chopped
  • 2 garlic cloves, minced
  • 1/2 tsp curry powder
  • 1/2 tsp ground coriander
  • 1/2 tsp cumin
  • 1/2 tsp minced fresh ginger
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 3 cups vegetable broth
  • 1 cup full fat coconut milk

Instructions

  1. If your soup maker has a SAUTE function, add the butter and onion to the jug and press SAUTE. If it doesn't have a SAUTE function, start with Step 2.
  2. Add remaining/all ingredients to the soup maker in the order listed. Stir before installing the lid.
  3. Select SMOOTH SOUP function, then START.
  4. When the soup in done, serve immediately.
