Potatoes I prefer to use yellow potatoes because I like the flavor, but I also think they blend up creamier than white potatoes. Make sure the potatoes you use are chopped into pieces about 1/4″ wide.
Leeks An average sized leek should yield enough for this recipe. See the Tips section below for directions on properly cleaning leeks.
Seasonings I keep seasonings to the basics, just the aromatic blend of onion and garlic sauted in butter, along with salt and pepper. I prefer to keep it simple, but you may wish to add other seasonings like herbs and spices.
Broth I used chicken broth in the recipe, but feel free to use other broths, like vegetable, mushroom, or even a vegan chicken broth.
Heavy Cream I added heavy whipping cream to the recipe, but again, you could use your favorite dairy product, like half-and-half, or even a non-dairy milk product like unflavored, unsweetened almond, soy, oat, or coconut milk.

Step 1 Add the onion, garlic, and butter to the carafe and select SAUTE.
Step 2 Add the remaining ingredients and give it a stir. Put the lid on and cook on the SMOOTH SOUP setting.
Step 3 Serve immediately. Add toppings if you like, along with bread or crackers.
Tips for Making Leek and Potato Soup in a Soup Maker
How to wash the leeks Leeks often hide lots of dirt and grit between the layers, so it’s important to properly wash them before using them in recipes. Trim and remove the tips, roots, and outer leaves. Slice the leeks in half lengthwise, then cut each half into 1/2″ slices. Put them in a colander and rinse under running water. Fill a large bowl with water and submerge the colander full of leeks into the bowl. Separate the layers as best you can and agitate them in the water to rinse out the grit. Hold the colander under running water again.
Can I make it vegan? To make it vegan, either leave out the butter, or substitute a plant-based butter or oil. Also substitute your favorite plant-based milk for the heavy whipping cream. The chicken broth can be replaced by any of the suggestions in the broth section above, or simply use water.
Can I make it dairy-free? For a dairy-free version, choose your favorite plant-based oil or butter and milk. See the suggestions in the Ingredients section above.
Can I make it low carb? Although this certainly isn’t a keto recipe, it is considered low carb. But if you would like to lower the carbohydrate amount even further, you could use less potatoes in the recipe, or even substitute chopped cauliflower for some of the potatoes.
What if I don’t have a soup maker? No problem! Although I prefer to make leek and potato soup in a soup maker, you can still make the soup if you don’t have one. Just cook everything in a medium saucepan over medium heat on the stove. Stir the soup frequently while it cooks and use a stick blender to blend the soup for about three minutes just before serving.

Leek and Potato Soup in Soup Maker

Ingredients
- 2 Tbsp butter
- 2 cloves garlic, chopped
- 1/2 cup onion, chopped
- 3 cups potatoes, peeled and cubed
- 2 cups leeks, cleaned and chopped
- 3 cups chicken stock
- 1/2 cup heavy whipping cream
- 1 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- If your soup maker has a SAUTE function, add the butter, garlic, and onion to the jug and press SAUTE. If it doesn't have a SAUTE function, start with Step 2.
- Add remaining/all ingredients to the soup maker in the order listed. Stir before installing the lid.
- Select SMOOTH SOUP function, then START.
- When the soup in done, serve immediately.
