Ninja Speedi Meatloaf & Mashed Cauliflower

  • Bread crumbs
  • Milk
  • Onion granules

  • Fresh asparagus
  • Ketchup
  • Worcestershire sauce
  • Chili powder
  • Red wine vinegar

Substitutions

Frozen cauliflower I follow a low carb diet and always have frozen cauliflower on hand, so that’s what I used. But you could use fresh in this recipe. Just add a cup of water to the cooking pot along with the cauliflower. Or if you prefer, you could use potatoes. Again, just add a cup of water to the pot along with the potatoes.

Ground beef This recipe calls for a pound of meat, and I used 100% grass-fed ground sirloin. But you could use another grade of ground beef, or even another meat if you like. Try ground turkey or chicken, or substitute some of the ground beef for ground pork.

Fresh parsley I think fresh parsley adds a lot more flavor to the recipe, but you could use dried if you like. Just cut the amount to about 1.5 TBSP. You could also substitute basil, oregano, and marjoram, or an Italian seasoning blend.

Sauce If you don’t have everything on hand to make the sauce, or if would prefer something else, feel free to use a prepared barbecue sauce or plain ketchup. Or even leave the meat loaves plain!

How to Make Meatloaf in the Ninja Speedi

This is how I made meatloaf and mashed cauliflower in the Ninja Speedi.

Step 1 Add the cauliflower, butter, and garlic salt to the cooking pot and stir.

Step 2 Add the crisping tray to the cooking pot in the elevated position. Then, mix together the ground sirloin, egg, parmesan, breadcrumbs, milk, and seasonings in a bowl. Form into four patties and place on the crisping tray.

Step 3 Set the unit to the Speedi Meals setting, the temperature to 350° and the time to 15 minutes. The unit will steam for about 15 minutes before turning on the air fryer mode.

In the meantime, prepare the sauce by mixing all the ingredients together in a small bowl.

When the unit switches over to air fryer, lift the lid and spoon the sauce over the patties. Close the lid and continue cooking.

Step 4 When there is 6 minutes left on the timer, lift the lid. Carefully remove the crisping tray with the patties on it. Set aside. Move the cauliflower to one side of the cooking pot. Put the asparagus in the cooking pot with the cauliflower. Replace the crisping tray with the meatloaf patties and close the lid.

Check the temperature of the meatloaf with a meat thermometer when there is a minute left on the timer. If it hasn’t reached 160°, then add a few more minutes to the cooking time.

When the meatloaves are done, remove them and the asparagus from the unit. Mash the cauliflower in the cooking pot with a silicone potato masher.

Serve with the meatloaf and asparagus.

Tips for Making Ninja Speedi Meatloaf with Cauli Mash

This is one of the more complicated Ninja Speedi recipes, because you need to juggle the timing of a few things at once. The times are adjustable, so play around to get them to your liking. Here are a few suggestions.

Tips & Tricks

  • Adding the sauce Be aware that the sauce, along with the meat drippings, may drip through the Crisping Tray onto the cauliflower. This will give the mashed cauliflower a slight brownish or reddish tinge. If you want to avoid the sauce discoloring your mashed vegetables, add it after you remove the loaves from the Ninja Speedi. Or if you prefer a nice caramelized sauce, add it in Step 4 of the recipe.
  • Timing the asparagus I’ll be honest, it’s hard to get the asparagus perfectly cooked. I typically look for thin stalks, but if you get thicker stalks, you may need more cooking time. Also, putting the asparagus in the cooking pot instead of on the Crisping Tray will give it more of a steam than a sear. So choose the Level and the amount of time according to how you like your asparagus cooked.
  • Fully cooking the meatloaf Properly cooked hamburger should have an internal temperature of 160°, and the best way to ensure your meatloaf is done is to check it with an instant read thermometer. (See the link above) If you don’t have one, just cut one of the meatloaves apart at the center and make sure it’s no longer pink.

Ingredients

Level 1 Ingredients

  • 20 oz frozen cauliflower florets
  • 3 TBSP unsalted butter, cubed
  • 2 tsp garlic salt

Level 2 Ingredients

  • 1 lb ground sirloin
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup onion granules
  • 1/4 cup minced fresh parsley
  • 2 cloves garlic, minced
  • 1/2 tsp black pepper
  • 12 oz asparagus spears

Sauce

  • 1/3 cup ketchup
  • 1 TBSP Worcestershire sauce
  • 1 TBSP red wine vinegar
  • 2 tsp chili powder

Instructions

  1. Add all the Level 1 Ingredients to the Ninja Speedi cooking pot. Stir together with a silicone spatula.
  2. Place the Crisping Tray in the pot in the elevated position.
  3. In a large mixing bowl, add all the Level 2 Ingredients except the asparagus spears. Mix together with your hands or a large wooden spoon just until the ingredients are evenly blended.
  4. Divide the meat mixture into four equal portions and shape into small loaves. Place the loaves on the Crisping Tray.
  5. Close the lid. Make sure the SmartSwitch is set to RAPID COOK and press the POWER button. Select SPEEDI MEALS, set the temperature to 350° and the time to 15 minutes. Press START/STOP button.
  6. The unit will steam for about 15 minutes. While it's steaming, mix together the sauce ingredients in a small bowl.
  7. When the unit switches from steam mode to crisping mode, lift the lid. Add a quarter of the sauce to each loaf and spread with the back of a spoon. Close the lid. The unit will continue on crisping mode.
  8. When there is 6 minutes left on the timer, lift the lid. With silicone-tipped tongs, move the meatloaves to the sides of the Crisping Tray. Lay the asparagus in the middle of the Crisping Tray. Add butter on top of the asparagus if you like. Close the lid.
  9. With 1 minute left on the timer, lift the lid. With an instant read thermometer, check the meatloaves to see if the internal temperature has reached 160°. If not, add more minutes to the cooking time. If the have reached the proper temperature, close the lid and let the unit finish cooking the asparagus.
  10. When the unit shuts off, lift the lid. With silicone tongs, remove the asparagus and meatloaves to four serving plates. Carefully lift the Crisping Tray from the unit with the tongs.
  11. Mash the cauliflower in the cooking pot with a silicone-covered potato masher. Or scoop the cauliflower into a bowl and mash with a regular potato masher or immersion blender. Add salt, pepper, and butter to taste if you like. Divide the cauli mash between the four plates and serve.
