Here is the list of ingredients, along with some substitutions, that you’ll need to make vegetable soup in your soup maker.
Vegetables For this recipe, I used onion, carrot, garlic, green beans, cabbage, and zucchini, but you can substitute any of these for your favorite vegetables. Or use whatever you have on hand. I prefer to use low carb vegetables, but you could certainly use more starchy, higher carb vegetables like potatoes, peas, and corn.
This recipe uses tomato paste to flavor the broth, but you could substitute some diced tomatoes if you like. You will probably need to adjust the amount of broth accordingly, though.
Herbs & Seasonings This recipe calls for only basil, oregano, and salt for seasoning, but like the vegetables, you can use whatever seasonings you prefer. Parsley, marjoram, and rosemary would also work very well in this recipe.
Broth I used chicken broth in this recipe, but you could use vegetable or mushroom broth instead. You could also use vegetarian or vegan chicken broth.

- 1/2 cup onion, chopped
- 3/4 cup carrots, sliced 1/2" thick
- 2 cloves garlic, minced
- 1 1/2 cups cabbage, chopped
- 1/2 cup green beans
- 3/4 cup zucchini, sliced 1/2" thick
- 3 1/2 cups chicken broth
- 1 Tbsp tomato paste
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/4 tsp salt
1. Put all the ingredients in the soup maker in the order listed.
