Substitutions
Milk I’ve made this homemade pumpkin foam cold brew recipe a few times and switched up the milk each time. Whatever your favorite milk is, plant-based or dairy, should work fine in this recipe. I’ve even used vanilla-flavored milk and creamer for a little extra creaminess.
Pumpkin pie spice If you don’t have or can’t find pumpkin pie spice, you can make your own by mixing equal parts cinnamon, clove, nutmeg, and ginger, or a combination to your liking.
Maple syrup I like the flavor of maple and pumpkin together, but other sweeteners will work, too. Cane sugar, low carb sweeteners like monk fruit, and even honey are great in this recipe. Use what you prefer, but be aware you may need to adjust the amount.
Coffee This is a cold brew recipe, but you could use the pumpkin cream cold foam to top hot coffee too. Also, you could try a flavored coffee to boost the pumpkin flavor.
How to Make Skinny Pumpkin Cream Cold Brew at Home

Step 1 Measure the ingredients for the dairy free pumpkin cream cold foam–milk, pumpkin, spice, syrup, and vanilla–into a small container.
Step 2 Blend these ingredients together for a couple minutes with a milk frother.
Step 3 Pour the pumpkin cream cold foam over the cold brew. Stir together if you like, and top with whipped cream and a sprinkle of pumpkin pie spice or cinnamon.

Ingredients
- 1/4 cup plant based milk
- 2 Tbsp pumpkin puree
- 1/2 tsp pumpkin pie spice
- 1.5 Tbsp 100% pure maple syrup
- 1/2 tsp vanilla extract
- 1.5 cups cold brew coffee
Instructions
- To a small container, add the milk, pumpkin puree, pumpkin pie spice, maple syrup, and vanilla extract. Blend together with a milk frother or a mixer with a whisk attachment until foamy.
- To serve, add the cold brew to a tall glass and pour the dairy free pumpkin cold foam over the top. Top with an extra sprinkle of pumpkin pie spice and whipped cream if you like.
