No kitchen appliances are needed to make this recipe, just some standard utensils everyone has in their kitchen. Here’s what you need:

  • Cutting board & knife
  • Measuring cups & spoons
  • Large mixing bowl
  • Spatula
  • Cheese grater (optional)

Handy tip!

Don’t buy pre-shredded cheddar cheese. Buy the cheese in a brick and shred it yourself. Pre-shredded cheese is coated to keep the shreds from sticking together in a large clump. But it’s dry and doesn’t incorporate with the mayo like we want in this recipe. Freshly grated cheddar is much softer and has more moisture, too, which blends with the mayo to make a creamy spread.

Substitutions

Chicken I prefer the taste of rotisserie chicken that you can get in any major grocery store deli department. But you could also use canned chicken or leftover chicken if you have it on hand.

Or use whole grilled skinless, boneless chicken breasts, instead of the shredded chicken. Then just mix up the jalapeños and pimento cheese ingredients and top the chicken with the mixture and honey.

Cheddar cheese I prefer to use freshly shredded cheese from a brick (see the Handy Tip below), but you could save even more time and use packaged shredded cheese. Mild, sharp, and even extra sharp cheddar are all delicious in this recipe, so use what you prefer.

Cream cheese I used full-fat cream cheese since I was creating a keto recipe, but feel free to use reduced fat or even fat-free cream cheese if you like.

Mayonnaise Again, I used full-fat mayonnaise, but reduced fat or fat-free will work also.

Honey I only use raw local honey, but use what you have on hand. However, the amount of net carbs will be affected by whichever honey you choose to use.

Step 1 Prep the ingredients by shredding the chicken and cheese, if necessary, and chopping the jalapeños. Add all the ingredients, except the honey, to a large bowl and mix well.

  • 8 oz rotisserie chicken meat, shredded
  • 4 oz shredded cheddar cheese
  • 2 oz cream cheese, softened
  • 4 oz jar pimentos, drained
  • 2 Tbsp jalapeno, seeded & diced
  • 2/3 cup mayonnaise
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 Tbsp Worcestershire sauce
  • 6 tsp raw honey

  1. Add all the ingredients, except the honey, to a large mixing bowl. Stir until mixed well.
