Substitutions
Ground meat Ground chicken, turkey, or pork, as well as chorizo, vegan and vegetarian options all work great. You’ll need to adjust your seasonings accordingly.
Seasonings Taco seasoning can be substituted for the total amount of the chili powder and cumin. Fresh garlic can replace the dried granules.
Rice I always use white rice, but nearly any rice will work. You can even make this taco casserole with riced cauliflower for a keto or low carb version.
How to Make this Easy, Cheesy Taco Rice Casserole
Step 1 Saute the beef in the cooking pot. Add the onions and peppers and saute for about 5 minutes. Mix the seasonings in a small dish.
Step 2 Add the seasonings, rice, broth, tomatoes and chiles to the beef and veggies. Stir and cook for about 20 minutes until the liquid is absorbed.
Step 3 Sprinkle the cheese on top and bake for about 5 minutes to melt.
Step 4 Serve with your favorite taco toppings.

Cheesy Taco Rice Casserole with Ground Beef

Ingredients
- 1 lb ground beef
- 1 cup onion, chopped
- 2 cups bell pepper, any color, chopped
- 2 tsp chili powder
- 2 tsp cumin
- 1 tsp dried garlic granules
- 1 cup long grain rice
- 1 cup beef broth
- 1 can Rotel tomatoes & green chiles
- 8 oz shredded Mexican cheese
- Toppings (optional):
- Green onions, sliced
- Salsa
- Sour Cream
- Black olives
- Jalapeno, sliced
Instructions
- In an oven safe skillet on the stove or multi cooker pot, crumble and brown the ground beef on medium heat. Drain the fat if necessary and add the onion and bell pepper and stir to evenly mix. Saute for about 5 minutes.
- While the vegetables are sauteing with the beef, in a small dish mix together the chili powder, cumin, and dried garlic granules.
- Add the seasonings, rice, broth, and tomatoes with chiles to the skillet or cooking pot. Mix thoroughly to distribute the seasonings.
- Cover and cook for about 20 minutes until the liquid has been absorbed by the rice. You may need to lower the heat if the liquid is evaporating too quickly.
- Sprinkle the cheese on top and bake for about 5 minutes until melted.
- Serve the taco rice casserole with your favorite toppings, like sliced green onions, jalapenos and black olives, along with salsa and sour cream.
